One of the oldest recipes for cheese making in the world. There are over 100 different types of Ossau Iraty being made in the valley of the Ossau and hills of Iraty in the Basque region of France.
With a slightly oily dense texture, the aroma is slightly sweet and gamely aroma. When you take a bite you will notice the roasted nutty taste that is followed by a more vegetal grassy finish.
Fantastic served with semi-dried figs and walnuts or baked into shortbread and paired with a gentle cold climate Pinot Noir.
