Ingredients
1 can of chickpeas (warmed, then drained and rinsed)
1/4 cup hulled tahini
1 garlic clove
juice of 1/2 a lemon
salt to taste
2 ripe peaches, chopped into wedges
a few heirloom tomatoes, chopped
Lebanese cucumber, sliced
a handful of mint, chopped
a handful of parsley, chopped
juice of 1/2 lemon
2 tbsp olive oil
salt and pepper
za’atar
chilli flakes
haloumi
Hummus
Peach tomato salad
Directions
Blitz hummus ingredients together in high speed blender. Drizzle in ice cold water and continue to blitz until fluffy and smooth.
Top the hummus with your peach salad. Sprinkle with za’atar and chilli flakes. Sear haloumi in a hot pan and serve immediately.
