Bring the stock to a simmer with a squeeze of lemon juice.
Pop the grated cheese into a zip lock bag or container with a lid, add the corn starch and get the kids to shake it like crazy until coated with the starch.
Reduce the stock to the lowest heat and add the cheese in batches, whisking as you go until the cheese is totally incorporated and the consistency is smooth.
Serve the fondue right away with the vegetables and bread, if using.
