Italian Flat Bread with Rocket, Mozzarella, Basil and Tomato
Sieve the flour into a bowl and make a well in the centre.
Sprinkle the salt into the well and pour in the olive oil and the water. Mix thoroughly with your fingers until it becomes thick and starts to look like dough.
Transfer the dough to a floured surface and knead the dough until it’s smooth and elastic.
Divide the dough into equal sized pieces (about the size of an egg) and quickly knead them again into a round balls.
Use a rolling pin or your hands to roll the balls out into circles.
Cook the flatbreads on a hot BBQ or preheated pan for about 30 seconds on each side and serve warm.
Fill them with mozzarella, rocket, tomatoes and basil. Drizzle with a little extra virgin olive oil and finish with a pinch of salt. Fold and enjoy.
