A classic Greek salad recipe.
Horiatiki Salata is a classic salad familiar to all. It is very simple, but its success relies heavily on the use of the freshest seasonal ingredients: ripe, sweet aromatictomatoes; crisp cucumber; luscious green capsicums, firm kalamata olives; and salty, smooth feta cheese. This salad can be served with any meal at any time, or even as a meal in itself.
4 sweet ripe tomatoes
1 long green capsicum (shaped like a horn)
1 continental cucumber, peeled (unless you obtained it from your garden, in which case leave the skin on)
1 Spanish red onion
2-3 tbsp kalamata olives
200g Greek feta
½ cup olive oil
1 tsp red wine vinegar
½ tsp Greek dried oregano
½ tsp salt
Slice the tomatoes, cucumbers and capsicum.
Try to make all vegetables an even size.
Slice the red onion into thin rings, then soak in a bowl of iced water.
Assemble all the ingredients together in a bowl.
Sprinkle the oregano and finish off with the red wine vinegar, salt and olive oil.
Mix well, then crumble feta cheese on top.
