Bring the flour, pinch of salt, a little drizzle of olive oil and the water together in a bowl, and use clean hands to bring together into a dough. Now, let’s get the muscles going! Knead the dough for a couple of minutes until smooth.
Dust a clean work surface with flour and roll the dough out using a rolling pin until its about 2 mm in thickness. Cut the dough into circles or triangles, or whatever shape you like using a cookie cutter or similar.
Cut the cheese so it can fit into the shapes once folded. Place a piece of cheese on one half of the dough shape and then use your fingers to fold and press the little biters closed so that the cheese is enclosed inside.
Heat a pan large enough to hold the biters side by side over a medium heat. Once hot, add a tablespoon of oil and carefully lower the shapes into the oil. Cook until golden, flip and repeat. Once golden on both sides, transfer the golden, cheesy biters to a plate lined with kitchen paper to remove any excess oil.
Once cool, munch away!
